How to Make Nocino at Home

If you enjoy the rich flavors of Italian liqueurs, then making nocino at home is a must-try. Nocino is a traditional Italian walnut liqueur that is deeply aromatic and deliciously bittersweet. Not only is it a great way to use the green walnuts that are abundant in the summertime, but it also makes for a unique homemade gift.

Ingredients and Equipment:

Before getting started, gather the following ingredients and equipment:

  • Green walnuts
  • Spirit of choice, such as vodka or brandy
  • Sugar
  • Whole spices (cinnamon sticks, cloves, and nutmeg)
  • Airtight glass jars

Instructions:

1. Begin by thoroughly washing and drying the green walnuts. Make sure to wear gloves to prevent staining your hands.

2. Using a sharp knife, carefully quarter the walnuts, removing any hard stems or blemishes.

3. Place the quartered walnuts into the glass jars, filling them about halfway or three-quarters full.

4. Add the chosen spirit to the jars, ensuring that all the walnuts are fully submerged.

5. Seal the jars tightly and store them in a cool, dark place for at least 40 days. During this time, the walnuts will steep and infuse their flavors into the spirit.

6. After the steeping period, strain the nocino through a fine-mesh sieve or cheesecloth into a clean container.

7. In a saucepan, combine an equal amount of sugar and water, and bring the mixture to a boil. Stir until the sugar has completely dissolved, and then allow the syrup to cool.

8. Add the syrup to the strained nocino, adjusting the sweetness to taste. You can also add whole spices like cinnamon sticks, cloves, or nutmeg for added flavor if desired.

9. Place the nocino back into the glass jars and allow it to mature for at least three months. The longer it sits, the smoother and more complex the flavors will become.
